Chicken Noodle Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 2 cups egg noodles or pasta of your choice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Sauté Vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes until the vegetables begin to soften. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  2. Add Broth and Herbs:
    • Pour in the chicken broth. Add the dried thyme, dried basil, and dried parsley. Stir to combine. Bring the mixture to a boil.
  3. Cook Noodles:
    • Once boiling, add the egg noodles or pasta. Reduce the heat to a simmer and cook according to the package instructions, typically 8-10 minutes, until the noodles are tender.
  4. Add Chicken:
    • Stir in the cooked chicken. Simmer for an additional 5 minutes until the chicken is heated through.
  5. Season:
    • Taste the soup and add salt and pepper as needed.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh chopped parsley, if desired. Serve hot and enjoy!
