Ingredients
- 1 large eggplant
- 2 tbsp olive oil

- 1/2 tsp salt

Instructions
- Prepare the Eggplant:
- Wash the eggplant and cut it into 1/4-inch thick rounds. If desired, you can peel the eggplant before slicing.
- Season the Eggplant:
- Place the eggplant slices in a bowl. Drizzle with olive oil and toss to coat evenly.
- Prepare the Breading:
- In a separate bowl, combine the breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, dried oregano, salt, and black pepper.
- Bread the Eggplant:
- Dip each eggplant slice into the breadcrumb mixture, pressing gently to ensure the coating sticks well.
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for about 3 minutes.
- Arrange the Eggplant:
- Lightly spray the air fryer basket with cooking spray. Arrange the breaded eggplant slices in a single layer in the basket. You may need to cook in batches depending on the size of your air fryer.
- Cook the Eggplant:
- Air fry the eggplant at 375°F (190°C) for 15-20 minutes, flipping halfway through the cooking time, until the eggplant slices are golden brown and crispy.
