Air Fryer Eggplant

Ingredients

  • 1 large eggplant
  • 2 tbsp olive oil
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Cooking spray
  • Marinara sauce (for serving, optional)

Instructions

  1. Prepare the Eggplant:
    • Wash the eggplant and cut it into 1/4-inch thick rounds. If desired, you can peel the eggplant before slicing.
  2. Season the Eggplant:
    • Place the eggplant slices in a bowl. Drizzle with olive oil and toss to coat evenly.
  3. Prepare the Breading:
    • In a separate bowl, combine the breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, dried oregano, salt, and black pepper.
  4. Bread the Eggplant:
    • Dip each eggplant slice into the breadcrumb mixture, pressing gently to ensure the coating sticks well.
  5. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  6. Arrange the Eggplant:
    • Lightly spray the air fryer basket with cooking spray. Arrange the breaded eggplant slices in a single layer in the basket. You may need to cook in batches depending on the size of your air fryer.
  7. Cook the Eggplant:
    • Air fry the eggplant at 375°F (190°C) for 15-20 minutes, flipping halfway through the cooking time, until the eggplant slices are golden brown and crispy.
  8. Serve:
    • Remove the eggplant from the air fryer and serve immediately. If desired, serve with marinara sauce for dipping.

Tips:

  • For an extra crispy texture, you can double dip the eggplant slices: dip in a beaten egg before coating with breadcrumbs.
  • Ensure not to overcrowd the air fryer basket to allow even cooking.
  • Adjust seasoning to your taste by adding more herbs or spices.
