Baked Pierogi Casserole

Recipe: Baked Pierogi Casserole

Ingredients:

For the Pierogi Casserole:

  • 1 package (about 24 pieces) frozen pierogies (any variety)
  • 2 tablespoons unsalted butter, melted
  • 1 large onion, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and black pepper to taste
  • Chopped fresh chives or green onions for garnish (optional)

For the Topping:

  • 1/2 cup breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme

Instructions:

Preheat the Oven:

  1. Preheat your oven to 375°F (190°C).

Cook the Pierogies:

  1. Boil the frozen pierogies according to the package instructions until they float to the surface. Drain and set aside.

Sauté Onions:

  1. In a skillet, melt 2 tablespoons of butter over medium heat.
  2. Add thinly sliced onions and sauté until they are golden brown and caramelized. Set aside.

 Assemble the Casserole:

  1. In a large bowl, gently toss the boiled pierogies with melted butter, shredded cheddar cheese, sour cream, caramelized onions, salt, and black pepper.
  2. Transfer the mixture to a greased baking dish, spreading it evenly.

 Prepare the Topping:

  1. In a small bowl, combine breadcrumbs, melted butter, grated Parmesan cheese, garlic powder, and dried thyme.

Bake:

  1. Sprinkle the breadcrumb topping evenly over the pierogie mixture in the baking dish.
  2. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is heated through.

Garnish and Serve:

  1. Remove from the oven and let it rest for a few minutes.
  2. Garnish with chopped fresh chives or green onions if desired.

Serve:

  1. Scoop out portions of the Baked Pierogi Casserole and serve hot.

Note: Feel free to customize the casserole by adding cooked bacon, diced ham, or additional herbs for extra flavor.
