Lemon White Chocolate Truffles Recipe

Ingredients:

  • 8 oz (225g) white chocolate, finely chopped
  • 1/4 cup (60ml) heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon zest (from about 1-2 lemons)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup (60g) powdered sugar, for rolling

Instructions:

  1. Prepare the Ganache:
    • Place the finely chopped white chocolate in a heatproof bowl.
    • In a small saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer. Remove from heat.
    • Pour the hot cream mixture over the white chocolate. Let it sit for a minute to melt the chocolate, then stir until smooth and fully combined.
    • Add the lemon zest, lemon juice, vanilla extract, and a pinch of salt to the chocolate mixture. Stir until well incorporated.
  2. Chill the Mixture:
    • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm enough to handle.
  3. Form the Truffles:
    • Line a baking sheet with parchment paper.
    • Using a teaspoon or a small cookie scoop, scoop out small portions of the chilled mixture and roll them into balls with your hands. If the mixture is too sticky, you can dust your hands with a bit of powdered sugar.
    • Place the rolled truffles on the prepared baking sheet.
  4. Roll in Powdered Sugar:
    • Put the powdered sugar in a shallow bowl.
    • Roll each truffle in the powdered sugar until evenly coated. Shake off any excess sugar.
  5. Chill and Serve:
    • Place the coated truffles back on the parchment-lined baking sheet and refrigerate for another 30 minutes to firm up before serving.

  • White Chocolate: Use high-quality white chocolate for the best flavor and texture. Chocolate chips are not recommended as they often contain stabilizers that prevent smooth melting.
  • Coating Options: Instead of powdered sugar, you can roll the truffles in finely chopped nuts, shredded coconut, or more finely grated lemon zest for a different texture and flavor.
  • Storage: Store the truffles in an airtight container in the refrigerator for up to 1 week. Let them sit at room temperature for a few minutes before serving for the best texture.
