Potato Soup

Ingredients:

  • 6 medium potatoes, peeled and diced (Yukon gold or russet work well)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • 1 ½ cups heavy cream (or milk or half-and-half)
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (for thickening)
  • Salt and pepper, to taste
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon dried thyme (optional)
  • 1 cup shredded cheddar cheese (optional for a cheesy version)
  • Toppings: crumbled bacon, shredded cheese, green onions, sour cream (optional)

Instructions:

Step 1: Cook the Vegetables

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until they become soft and translucent, about 3-4 minutes.
  2. Add the diced potatoes to the pot, followed by the chicken broth. Season with salt, pepper, thyme, and smoked paprika (if using).
  3. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Step 2: Thicken the Soup

  1. In a small bowl, whisk the flour with a couple of tablespoons of heavy cream (or milk) to form a smooth slurry.
  2. Stir the slurry into the pot to thicken the soup. Cook for another 5 minutes, stirring occasionally.
  3. If you prefer a smooth soup, use an immersion blender to blend the soup to your desired consistency. For a chunkier soup, mash some of the potatoes with a potato masher.

Step 3: Add the Cream

  1. Stir in the remaining heavy cream (or milk/half-and-half) and let the soup simmer for an additional 5-10 minutes until it’s thickened and creamy.
  2. For a cheesy version, stir in the shredded cheddar cheese at this stage and let it melt into the soup.

Step 4: Adjust Seasoning

  1. Taste the soup and adjust the seasoning with more salt and pepper if necessary.

Step 5: Serve

  1. Ladle the soup into bowls and add your favorite toppings like crumbled bacon, extra shredded cheese, green onions, or a dollop of sour cream.
  2. Serve with crusty bread or crackers for a complete meal.

Tips:

  • For a Richer Flavor: Add a splash of white wine to the soup while sautéing the onions, or stir in a tablespoon of sour cream for extra tang.
  • Healthier Option: Swap the heavy cream for milk or a dairy-free alternative like almond milk or coconut milk for a lighter version.
  • Toppings: Toppings like crispy bacon, shredded cheddar, green onions, or a sprinkle of paprika can elevate the flavors and texture of the soup.
