Shrimp Garlic Pasta Recipe

Ingredients:

  • 12 oz (340g) pasta (linguine or spaghetti work well)
  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup (120ml) white wine or chicken broth
  • 1 lemon (juice and zest)
  • 1/4 cup (60ml) pasta cooking water (reserved)
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the pasta and set aside.
  2. Cook the Shrimp:
    • While the pasta is cooking, heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the shrimp to the skillet in a single layer, season with salt and pepper, and cook for 2-3 minutes on each side, until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Reduce the heat to medium.
    • Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, or until the garlic is fragrant and lightly golden.
    • Pour in the white wine (or chicken broth) and bring to a simmer. Let it cook for about 2-3 minutes, allowing the liquid to reduce slightly.
    • Add the lemon juice and zest, stirring to combine.
  4. Combine and Finish:
    • Return the cooked shrimp to the skillet, along with any juices that have accumulated.
    • Add the cooked pasta to the skillet, tossing to coat everything evenly in the sauce. If the pasta seems too dry, add a bit of the reserved pasta cooking water to loosen it up.
    • Stir in the chopped parsley and adjust the seasoning with additional salt and pepper, if needed.
  5. Serve:
    • Serve the shrimp garlic pasta hot, garnished with grated Parmesan cheese and additional parsley if desired.
    • Pair with a side of garlic bread and a fresh salad for a complete meal.

Tips:

  • Shrimp: Make sure not to overcook the shrimp, as they can become tough and rubbery. They should be pink and opaque when done.
  • Pasta Water: The reserved pasta water contains starch, which helps to thicken the sauce and make it cling to the pasta better.
  • Wine/Broth: White wine adds a nice depth of flavor, but chicken broth works well if you prefer not to use alcohol.
