Ingredients:

  • 8 oz (225g) linguine or fettuccine pasta
  • 1 pound (450g) large shrimp, peeled and deveined

  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook Pasta:
    • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Season Shrimp:
    • In a bowl, toss the shrimp with Cajun seasoning, ensuring they are well-coated.
  3. Sauté Shrimp and Sausage:
    • In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp and sliced Andouille sausage. Sauté until the shrimp turns pink and opaque, and the sausage is browned. Remove them from the skillet and set aside.
  4. Sauté Vegetables:
    • In the same skillet, add a bit more olive oil if needed. Sauté minced garlic until fragrant. Add sliced red and green bell peppers, and cherry tomatoes. Cook until the vegetables are slightly softened.
  5. Combine Shrimp, Sausage, and Vegetables:
    • Return the cooked shrimp and sausage to the skillet with the sautéed vegetables. Mix them together.
  6. Add Cream and Chicken Broth:
    • Pour in the heavy cream and chicken broth. Stir and simmer for a few minutes to let the flavors meld.
  7. Add Parmesan Cheese:
    • Gradually add the grated Parmesan cheese, stirring continuously until the sauce thickens. Season with salt and black pepper to taste.
  8. Combine with Pasta:
    • Add the cooked pasta to the skillet, tossing until the pasta is coated in the creamy Cajun sauce.
  9. Garnish and Serve:
    • Garnish with fresh parsley and serve immediately.
