- Cooking Time: 45-55 minutes
- Total Time: 1 hour 5 minutes – 1 hour 15 minutes
Ingredients:
For the Chicken:
- 1 whole chicken (3-4 lbs)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
- 4 cloves garlic, peeled and smashed
- Fresh herbs (optional, like rosemary, thyme, or parsley) for stuffing the cavity
For the Potatoes:
- 1 lb (450g) baby potatoes, halved or quartered if large
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Prepare the Chicken:
- Remove the giblets from the chicken and pat the chicken dry with paper towels.
- Rub the chicken all over with olive oil, making sure it’s evenly coated.
- In a small bowl, mix together garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Rub this seasoning mix all over the chicken, including under the skin if possible.
- Stuff the cavity of the chicken with the lemon halves, garlic cloves, and fresh herbs.
- Prepare the Potatoes:
- In a mixing bowl, toss the baby potatoes with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until they are evenly coated.
- Preheat the Air Fryer:
- Preheat your air fryer to 360°F (180°C) for about 5 minutes.
- Cook the Chicken:
- Place the seasoned chicken breast-side down in the air fryer basket.
- Cook at 360°F (180°C) for 30 minutes.
- Add the Potatoes:
- After 30 minutes, carefully flip the chicken over so that it is breast-side up.
- Arrange the seasoned potatoes around the chicken in the air fryer basket.
- Continue cooking for another 15-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
- Check for Doneness:
- Use a meat thermometer to check the thickest part of the chicken to ensure it has reached the safe internal temperature of 165°F (75°C).
- If the chicken or potatoes need more time, continue cooking in 5-minute increments until done.
- Rest the Chicken:
- Remove the chicken from the air fryer and let it rest for 10 minutes before carving. This helps the juices redistribute, keeping the meat moist.
Serving:
- Carve the Chicken:
- Carve the chicken and serve it with the roasted potatoes on the side.
- Garnish with fresh herbs or a squeeze of lemon juice if desired.
