ANDOUILLE SAUSAGE FRIED RICE

Crawfish, Shrimp & Andouille Sausage Fried Rice Recipe

Ingredients:

  • 1 cup cooked crawfish tails (peeled and deveined)
  • 1/2 lb shrimp, peeled and deveined
  • 2 andouille sausage links, sliced
  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons olive oil or butter
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 2 green onions, sliced (for garnish)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon Cajun or Creole seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon hot sauce (optional, for extra heat)
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions:

Step 1: Cook the Sausage

  1. Heat 1 tablespoon of olive oil or butter in a large skillet or wok over medium heat. Add the sliced andouille sausage and cook for 4-5 minutes, until browned and crispy. Remove the sausage from the skillet and set aside.

Step 2: Cook the Shrimp and Crawfish

  1. In the same skillet, add the shrimp and crawfish tails. Season with salt, pepper, and a pinch of Cajun seasoning. Cook for 3-4 minutes until the shrimp turns pink and is cooked through. Remove the seafood from the skillet and set aside with the sausage.

Step 3: Sauté Vegetables

  1. In the same skillet, add the remaining olive oil or butter. Sauté the diced onion, red bell pepper, green bell pepper, and minced garlic for 4-5 minutes, until the vegetables are soft and slightly caramelized.

Step 4: Scramble the Eggs

  1. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the sautéed vegetables.

Step 5: Add the Rice and Seasoning

  1. Add the cooked rice to the skillet and stir to combine it with the eggs and vegetables. Break up any clumps of rice as needed.
  2. Stir in the soy sauce, Cajun seasoning, smoked paprika (if using), and hot sauce. Adjust seasoning to taste, adding more salt, pepper, or Cajun seasoning if needed.

Step 6: Add Sausage, Shrimp, and Crawfish

  1. Return the cooked andouille sausage, shrimp, and crawfish to the skillet. Stir everything together until heated through, about 2-3 minutes.

Step 7: Garnish and Serve

  1. Remove the skillet from the heat. Garnish the fried rice with sliced green onions and serve with lemon wedges on the side for a fresh squeeze of citrus.

Tips:

  • Day-Old Rice: Using day-old rice works best for fried rice because it’s drier and will fry up nicely without becoming mushy.
  • Extra Veggies: You can add other vegetables like peas, corn, or carrots for extra color and texture.
  • Cajun Kick: If you like it spicier, feel free to add more hot sauce or a pinch of cayenne pepper.
