 Introduction

Avocado bread is a delicious, nutrient-packed alternative to traditional banana or zucchini bread. Using ripe avocado adds moisture, creaminess, and healthy fats, making each slice perfectly soft and tender. It’s naturally colorful, with a subtle green hue, and you can add mix-ins like chocolate chips, nuts, or dried fruit for extra texture.

This bread is great for breakfast, snacks, or even a light dessert.

Ingredients

  • 1 ripe avocado (about ½ cup mashed)

  • 1 cup all-purpose flour (or whole wheat for a healthier option)

  • ½ cup granulated sugar (adjust to taste)

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 eggs

  • ¼ cup milk (dairy or non-dairy)

  • 1 teaspoon vanilla extract

  • Optional mix-ins: ½ cup chopped walnuts, chocolate chips, or dried cranberries

 Instructions

Step 1: Preheat and Prepare Pan

Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mash the Avocado

In a medium bowl, mash the ripe avocado until smooth with minimal lumps.

Step 3: Mix Wet Ingredients

Add the eggs, milk, sugar, and vanilla extract to the mashed avocado. Whisk until fully combined.

Step 4: Combine Dry Ingredients

In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

Step 5: Combine Wet and Dry

Gradually fold the dry ingredients into the wet mixture until just combined. Don’t overmix. If using mix-ins, fold them in now.

Step 6: Bake

Pour the batter into your prepared loaf pan. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.

Step 7: Cool and Serve

Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
