Chicken Lombardy

Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 cup all-purpose flour, for dredging
- 4 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 8 ounces cremini or baby bella mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup dry Marsala wine
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Chicken:
- Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off excess.
- Cook Chicken:
- In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté Mushrooms and Garlic:
- In the same skillet, add the remaining 2 tablespoons of butter. Add sliced mushrooms and minced garlic, sautéing until the mushrooms are tender and the garlic is fragrant.
- Deglaze with Marsala:
- Pour in the Marsala wine, scraping the browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes, reducing slightly.
- Add Chicken Broth:
- Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for an additional 5 minutes, letting the sauce thicken.
- Assemble and Bake:
- Place the cooked chicken breasts back into the skillet, spooning the mushroom and wine sauce over the chicken. Sprinkle shredded mozzarella and grated Parmesan cheese over the top.
- Bake in the Oven:
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the cheese is melted, bubbly, and golden.
- Serve:
- Garnish with chopped fresh parsley before serving. Serve the Chicken Lombardy over pasta, rice, or with your favorite side dish.
