Chicken Lombardy

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 8 ounces cremini or baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup dry Marsala wine
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off excess.
  3. Cook Chicken:
    • In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  4. Sauté Mushrooms and Garlic:
    • In the same skillet, add the remaining 2 tablespoons of butter. Add sliced mushrooms and minced garlic, sautéing until the mushrooms are tender and the garlic is fragrant.
  5. Deglaze with Marsala:
    • Pour in the Marsala wine, scraping the browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes, reducing slightly.
  6. Add Chicken Broth:
    • Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for an additional 5 minutes, letting the sauce thicken.
  7. Assemble and Bake:
    • Place the cooked chicken breasts back into the skillet, spooning the mushroom and wine sauce over the chicken. Sprinkle shredded mozzarella and grated Parmesan cheese over the top.
  8. Bake in the Oven:
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the cheese is melted, bubbly, and golden.
  9. Serve:
    • Garnish with chopped fresh parsley before serving. Serve the Chicken Lombardy over pasta, rice, or with your favorite side dish.
