Ingredients

  • 1 cup (225g) full-fat cottage cheese

  • 1 cup (120g) self-rising flour, plus extra for dusting

  • 1/2 teaspoon salt (optional, if your flour is unsalted)

  • 1 tablespoon fresh or dried herbs (like chives, dill, or oregano) – optional for added flavor

  • Olive oil or cooking spray, for the pan

Note: If you don’t have self-rising flour, make your own by combining 1 cup (120g) of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt.

Equipment

  • Medium mixing bowl

  • Fork or spatula

  • Rolling pin

  • Large non-stick skillet or griddle

  • Kitchen towel or plate for covering

Instructions

Step 1: Prepare the Dough

In a medium bowl, combine the cottage cheese, self-rising flour, and salt/herbs (if using). Use a fork or spatula to mix until a shaggy dough begins to form. Then, use your hands to gently knead the mixture directly in the bowl for about 30-60 seconds, just until it comes together into a smooth, slightly sticky ball. Be careful not to over-knead.

Step 2: Divide and Shape

Lightly dust a clean work surface with flour. Turn the dough out onto it and divide it into 4 equal portions. Roll each portion into a smooth ball. Using a rolling pin, roll each ball into a thin, roughly 6-7 inch (15-18cm) circle or oval, about 1/8-inch thick. Don’t worry about perfect shapes—rustic is charming! If the dough sticks, use a light dusting of flour.

Step 3: Cook the Flatbreads

Heat a large non-stick skillet or griddle over medium heat. Lightly grease it with a drizzle of olive oil or a quick spray of cooking spray. Once hot, place one rolled-out flatbread in the skillet. Cook for 2-3 minutes, or until the bottom is golden brown with several darker spots and the top looks dry and begins to puff in places.

Step 4: Flip and Finish

Flip the flatbread using a spatula. Cook on the second side for another 1-2 minutes until golden brown. Transfer the cooked flatbread to a plate and cover it with a clean kitchen towel to keep it soft and warm. Repeat the process with the remaining dough balls, adding a tiny bit more oil to the pan if needed.

Step 5: Serve and Enjoy!

Serve the flatbreads immediately while warm and soft. They are best enjoyed fresh but can be stored for later use (see notes below).

Chef’s Notes & Serving Suggestions

  • Storage: Let cool completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or toaster to restore softness.

  • For Crispier Bread: Roll the dough thinner and cook for an extra 30-60 seconds per side.

  • Flavor Variations: Add garlic powder, everything bagel seasoning, or grated parmesan cheese to the dough for a flavor boost.

  • How to Use:

    • As a Wrap: Fill with chicken salad, grilled veggies, or falafel.

    • As a Pizza Base: Top with sauce, cheese, and your favorite toppings and broil until melted.

    • As a Side: Tear and dip into hummus, baba ganoush, or curry.

    • For Breakfast: Serve with scrambled eggs and avocado.
