Ingredients:

2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 large carrots, peeled and sliced
2 celery stalks, chopped
2 cups chopped green cabbage
1 zucchini, diced
1 cup broccoli florets
1 cup green beans, chopped
Liquid Base:
4 cups low-sodium vegetable broth
1 cup water (or more if needed)
1 can (14.5 oz) diced tomatoes (no added salt)
Juice of 1 lemon
Seasoning:
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
Salt and black pepper to taste
1/4 teaspoon red pepper flakes (optional, for a slight kick)
Optional Add-ins:
2 cups fresh spinach or kale, chopped
1/4 cup fresh parsley, chopped
Instructions:
1. Sauté the Vegetables:
In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery, and sauté for 5-7 minutes until softened.
2. Add Remaining Vegetables:
Stir in the cabbage, zucchini, broccoli, and green beans. Cook for another 3-4 minutes to slightly soften.
3. Add Liquid and Seasoning:
Pour in the vegetable broth, water, and diced tomatoes.
Add the oregano, basil, turmeric, cumin, salt, and black pepper. Stir to combine.
4. Simmer the Soup:
Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until all the vegetables are tender.
5. Add Greens and Lemon Juice:
Stir in the spinach or kale and cook for another 5 minutes until wilted.
Add the lemon juice for a fresh, tangy finish.
6. Taste and Serve:
Adjust the seasoning as needed and garnish with fresh parsley before serving.
