Garlic Parmesan and Potatoes

Ingredients:

  • 2 pounds baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Potatoes:
    • Wash and halve or quarter the baby potatoes, depending on their size, to ensure they cook evenly.
  3. Make Garlic Parmesan Mixture:
    • In a small bowl, mix together the olive oil, minced garlic, grated Parmesan cheese, dried thyme, dried rosemary, salt, and pepper.
  4. Coat Potatoes:
    • Place the halved or quartered potatoes in a large mixing bowl. Pour the garlic Parmesan mixture over the potatoes and toss until they are evenly coated.
  5. Roast Potatoes:
    • Spread the coated potatoes in a single layer on the prepared baking sheet.
    • Roast the potatoes in the preheated oven for 30-35 minutes or until they are golden brown and tender, stirring halfway through cooking for even browning.
  6. Garnish and Serve:
    • Once the potatoes are roasted to your desired crispness, remove them from the oven.
    • Sprinkle the roasted potatoes with chopped fresh parsley for a pop of color and additional flavor (optional).
    • Serve the garlic Parmesan roasted potatoes hot as a delicious side dish with your favorite main course.

  • You can customize the seasoning by adding other herbs or spices like paprika, onion powder, or Italian seasoning to the garlic Parmesan mixture.
