- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Potatoes:
- Wash and halve or quarter the baby potatoes, depending on their size, to ensure they cook evenly.
- Make Garlic Parmesan Mixture:
- In a small bowl, mix together the olive oil, minced garlic, grated Parmesan cheese, dried thyme, dried rosemary, salt, and pepper.

- Place the halved or quartered potatoes in a large mixing bowl. Pour the garlic Parmesan mixture over the potatoes and toss until they are evenly coated.
- Roast Potatoes:
- Spread the coated potatoes in a single layer on the prepared baking sheet.
- Roast the potatoes in the preheated oven for 30-35 minutes or until they are golden brown and tender, stirring halfway through cooking for even browning.
- Garnish and Serve:
- Once the potatoes are roasted to your desired crispness, remove them from the oven.
- Sprinkle the roasted potatoes with chopped fresh parsley for a pop of color and additional flavor (optional).
- Serve the garlic Parmesan roasted potatoes hot as a delicious side dish with your favorite main course.
Tips:
- You can customize the seasoning by adding other herbs or spices like paprika, onion powder, or Italian seasoning to the garlic Parmesan mixture.
- For extra cheesy potatoes, sprinkle some additional grated Parmesan cheese over the potatoes during the last few minutes of roasting.
- These potatoes pair well with grilled or roasted meats, poultry, or even as a tasty addition to a vegetarian meal. Enjoy!
