Ingredients

Shrimp

  • 1½ pounds (680 g) large shrimp, peeled and deveined
  • 1 lemon, sliced
  • 2 tablespoons kosher salt

Marinade

  • ¾ cup (180 ml) apple cider vinegar
  • ½ cup (120 ml) olive oil
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 teaspoons Dijon mustard
  • 1 tablespoon sugar (optional)
  • 1 teaspoon crushed red pepper flakes
  • 2 teaspoons whole black peppercorns
  • 1 teaspoon celery seeds
  • 3 sprigs fresh dill
  • 3 sprigs fresh parsley
  • 2 bay leaves
  • ½ cup (120 ml) fresh lemon juice

Instructions

Step 1: Prepare the Shrimp

  1. Fill a large pot with water, add kosher salt, and squeeze in juice from the lemon slices. Drop the lemon slices into the pot.
  2. Bring the water to a boil and add the shrimp. Cook for 2–3 minutes or until the shrimp are just pink and opaque.
  3. Drain the shrimp and transfer them to an ice bath to stop the cooking process. Once chilled, pat the shrimp dry with paper towels.

Step 2: Make the Marinade

  1. In a large bowl or jar, whisk together the apple cider vinegar, olive oil, Dijon mustard, sugar (if using), and lemon juice.
  2. Stir in the red onion, garlic, red pepper flakes, black peppercorns, celery seeds, dill, parsley, and bay leaves.

Step 3: Combine and Marinate

  1. Place the cooked shrimp in the marinade, ensuring all shrimp are submerged.
  2. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Step 4: Serve

  1. Before serving, stir the shrimp and marinade to redistribute the flavors.
  2. Transfer the pickled shrimp to a serving platter with some of the marinade ingredients for garnish.
  3. Pair with crackers, crusty bread, or serve atop a fresh salad.
