Hatch Green Chile Creamed Corn

Ingredients:

  • 4 cups frozen corn kernels
  • 1 cup hatch green chiles, roasted, peeled, and chopped
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped (for garnish, optional)

Instructions:

 Roast and Prepare Green Chiles:

  1. Roast the hatch green chiles, peel off the skin, remove seeds, and finely chop.

Cook Corn:

  1. In a large skillet over medium heat, melt the butter.
  2. Add the frozen corn and sauté for about 5 minutes until the corn is heated through.

 Make the Roux:

  1. Sprinkle the flour over the corn and stir continuously for 2-3 minutes to create a roux.

4. Prepare Cream Mixture:

  1. Slowly pour in the milk and heavy cream, stirring constantly to avoid lumps.
  2. Cook for an additional 5-7 minutes until the mixture thickens.

 Add Green Chiles:

  1. Stir in the chopped hatch green chiles, sugar, salt, and pepper.

 Melt Cheese:

  1. Add the shredded Monterey Jack cheese and continue stirring until the cheese is melted and the mixture is creamy.

Garnish and Serve:

  1. Remove from heat and let it sit for a couple of minutes to thicken.
  2. Garnish with chopped cilantro if desired.

Serve:

  1. Spoon the Hatch Green Chile Creamed Corn into a serving dish.
  2. Serve hot as a flavorful and comforting side dish.
