Creamy Tuscan Shrimp Recipe

Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 cup (150g) sun-dried tomatoes, chopped (if packed in oil, drain them first)
  • 2 cups (60g) fresh baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish, optional)

Instructions:

  1. Prepare the Shrimp: Pat the shrimp dry with paper towels and season them with salt and pepper.
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the shrimp in a single layer and cook for about 2-3 minutes per side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add the minced garlic and cook for about 1 minute, or until fragrant.
    • Pour in the heavy cream and chicken broth, stirring to combine.
    • Bring the mixture to a simmer and let it cook for about 2-3 minutes to thicken slightly.
  4. Add the Cheese and Seasoning:
    • Stir in the grated Parmesan cheese until it melts into the sauce.
    • Add the chopped sun-dried tomatoes, Italian seasoning, and a pinch of salt and pepper. Stir to combine.
  5. Add the Spinach: Add the baby spinach to the skillet and cook until it wilts, about 1-2 minutes.
  6. Combine with Shrimp:
    • Return the cooked shrimp to the skillet, stirring to coat them in the sauce.
    • Cook for another 2-3 minutes to heat the shrimp through and allow the flavors to meld.
  7. Serve: Garnish with chopped fresh basil if desired. Serve the creamy Tuscan shrimp over pasta, rice, or with crusty bread.

Tips:

  • Shrimp: Use large or jumbo shrimp for the best texture and flavor. If using frozen shrimp, make sure they are fully thawed and patted dry before cooking.
  • Spinach: Baby spinach works best as it wilts quickly and evenly. If using regular spinach, roughly chop it before adding to the skillet.
  • Sauce Consistency: If the sauce is too thick, add a bit more chicken broth to reach your desired consistency. If too thin, let it simmer a bit longer to thicken.
