Ham and Potato Soup

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups potatoes, peeled and diced (about 4-5 medium potatoes)
  • 2 cups cooked ham, diced
  • 3 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Prepare Ingredients:
    • Chop the onion, garlic, potatoes, ham, carrots, and celery.
  2. Combine in Slow Cooker:
    • Add the chopped onion, garlic, potatoes, ham, carrots, and celery to the slow cooker.
    • Pour in the chicken broth and add the dried thyme, dried parsley, salt, and pepper. Stir to combine.
  3. Cook:
    • Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes and vegetables are tender.
  4. Add Cream:
    • About 30 minutes before serving, stir in the heavy cream or half-and-half.
    • If you prefer a thicker soup, mix the cornstarch with water to make a slurry and stir it into the soup. Continue to cook for another 30 minutes until the soup thickens.
  5. Adjust Seasoning and Serve:
    • Taste and adjust the seasoning with more salt and pepper if needed.
    • Ladle the soup into bowls and serve hot.
