Farmer’s Casserole Recipe

Ingredients:

  • 3 cups (750g) frozen hash brown potatoes, thawed
  • 1 cup (240ml) shredded cheddar cheese
  • 1 cup (240ml) shredded Monterey Jack cheese
  • 1 cup (240ml) cooked ham, diced (or cooked sausage, crumbled)
  • 1/4 cup (60ml) green onions, sliced
  • 1 (12 oz or 360ml) can evaporated milk
  • 1 cup (240ml) milk
  • 4 large eggs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • Optional: Additional green onions or parsley for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a similar-sized casserole dish.
  2. Assemble the Base:
    • Spread the thawed hash browns evenly in the bottom of the prepared baking dish.
    • Sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the hash browns.
    • Distribute the diced ham (or sausage) and sliced green onions over the cheese layer.
  3. Prepare the Egg Mixture:
    • In a medium bowl, whisk together the evaporated milk, regular milk, eggs, garlic powder, onion powder, salt, and pepper until well combined.
  4. Combine and Bake:
    • Pour the egg mixture evenly over the layers in the baking dish.
    • Use a spatula to press down gently, ensuring the ingredients are evenly distributed and submerged in the egg mixture.
  5. Bake the Casserole:
    • Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the casserole is set. You can check for doneness by inserting a knife into the center; it should come out clean.
    • If the top starts to brown too quickly, you can cover the dish loosely with aluminum foil for the last 10-15 minutes of baking.
  6. Serve:
    • Remove the casserole from the oven and let it cool for a few minutes before slicing.
    • Garnish with additional green onions or parsley if desired.

Tips:

  • Make-Ahead: You can prepare the casserole the night before. Assemble the dish, cover it tightly with plastic wrap, and refrigerate overnight. In the morning, remove it from the refrigerator while you preheat the oven, then bake as directed.
