  • 4 large sweet onions (such as Vidalia), thinly sliced

  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup (100g) grated Gruyere cheese (or Swiss cheese)
  • 1 cup (100g) grated sharp cheddar cheese
  • 1 cup (120g) crushed buttery crackers (such as Ritz)
  • 2 tablespoons unsalted butter, melted
  • Optional: Fresh parsley or chives for garnish


  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish.
  2. Cook the Onions:
    • In a large skillet, melt 2 tablespoons of butter over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are very soft and starting to caramelize, about 15-20 minutes. Reduce the heat if necessary to prevent burning.
  3. Prepare the Cream Mixture:
    • In a medium bowl, whisk together the heavy cream, milk, salt, black pepper, and ground nutmeg.
  4. Assemble the Casserole:
