Creamy Garlic Mushrooms Recipe

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 pound (450g) mushrooms, cleaned and sliced (you can use cremini, button, or a mix)
  • 4 cloves garlic, minced
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60ml) chicken or vegetable broth
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Mushrooms:
    • In a large skillet, heat the butter and olive oil over medium-high heat.
    • Add the sliced mushrooms and cook, stirring occasionally, until they are browned and have released most of their moisture, about 5-7 minutes.
  2. Add the Garlic:
    • Reduce the heat to medium.
    • Add the minced garlic to the skillet and cook, stirring frequently, for about 1 minute or until fragrant.
  3. Make the Cream Sauce:
    • Pour in the heavy cream and chicken or vegetable broth, stirring to combine.
    • Stir in the grated Parmesan cheese and dried thyme.
    • Allow the mixture to simmer for about 3-5 minutes, or until the sauce has thickened to your desired consistency.
  4. Season and Serve:
    • Season with salt and pepper to taste.
    • Remove from heat and garnish with chopped fresh parsley.
  5. Serve:
    • Serve the creamy garlic mushrooms as a side dish, over toasted bread, or as a topping for steak, chicken, or pasta.

Tips:

  • Mushrooms: Make sure the mushrooms are dry before cooking them. If they are too wet, they will steam instead of browning.
  • Cream: For a lighter version, you can substitute half-and-half for the heavy cream, though the sauce will be less rich.
