  • 1/4 teaspoon almond extract (optional)
  • Pinch of salt
  • 1 tablespoon unsalted butter (for greasing the baking dish)
  • Powdered sugar (for dusting)

Instructions

  1. Preparation:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9-inch pie dish or a similar baking dish with the unsalted butter.
  2. Prepare the Fruit:
    • Evenly spread the pitted cherries and blueberries over the bottom of the greased baking dish.
  3. Make the Batter:
    • In a blender or mixing bowl, combine the eggs, milk, granulated sugar, flour, vanilla extract, almond extract (if using), and a pinch of salt.
    • Blend or whisk until the batter is smooth and free of lumps.
  4. Combine and Bake:
    • Pour the batter over the cherries and blueberries in the baking dish, making sure the fruit is evenly distributed.
    • Place the dish in the preheated oven and bake for 35-40 minutes, or until the clafoutis is puffed and golden brown around the edges and a toothpick inserted into the center comes out clean.
  5. Cooling and Serving:
    • Remove the clafoutis from the oven and let it cool slightly. It will deflate as it cools.
    • Dust with powdered sugar before serving.
  6. Serve:
    • Serve the clafoutis warm or at room temperature. It can be enjoyed on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
