Ingredients

  • 4 medium potatoes, washed and thinly sliced
  • 1 large onion, thinly sliced
  • 6 slices bacon, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the Griddle:
    • Preheat your Blackstone griddle to medium-high heat.
  2. Cook the Bacon:
    • Once the griddle is hot, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease on the griddle.
  3. Prepare the Potatoes:
    • In a large bowl, toss the sliced potatoes and onions with olive oil, garlic powder, paprika, dried thyme, salt, and pepper.
  4. Cook the Potatoes:
    • Add the potato and onion mixture to the griddle, spreading it out evenly in the bacon grease.
    • Cook for about 15-20 minutes, turning occasionally with a spatula to ensure even cooking. The potatoes should be golden brown and crispy on the outside, and tender on the inside.
  5. Add Cheese and Bacon:
    • Once the potatoes are cooked, sprinkle the shredded cheddar cheese and cooked bacon over the top.
    • Continue cooking for 2-3 minutes until the cheese is melted.
  6. Serve:
    • Remove the potatoes from the griddle and transfer them to a serving dish.
    • Sprinkle with fresh parsley, if using, for an added touch of color and flavor.
