Griddle Smashed Cinnamon Rolls with Warm Apple Pie Filling

Ingredients:

For the Cinnamon Rolls:

  • 1 can (8 rolls) refrigerated cinnamon rolls with icing

For the Apple Pie Filling:

  • 4 large apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) water

Instructions:

  1. Prepare the Apple Pie Filling:
    • In a large skillet over medium heat, melt the butter.
    • Add the sliced apples, granulated sugar, brown sugar, cinnamon, and nutmeg. Stir to coat the apples evenly.
    • Cook the apples for about 5-7 minutes, until they start to soften.
    • In a small bowl, mix the cornstarch with the water to create a slurry. Add the slurry to the apple mixture and stir to combine.
    • Cook for another 3-5 minutes, until the sauce thickens and the apples are tender.
    • Stir in the lemon juice and vanilla extract. Remove from heat and set aside.
  2. Cook the Cinnamon Rolls:
    • Preheat your griddle to medium heat.
    • Open the can of refrigerated cinnamon rolls and separate them.
    • Place each cinnamon roll on the hot griddle and use a spatula to press down and flatten them gently.
    • Cook the cinnamon rolls for about 2-3 minutes on each side, until they are golden brown and cooked through.
  3. Assemble the Dish:
    • Place the griddle-cooked cinnamon rolls on a serving platter.
    • Spoon the warm apple pie filling over the top of each cinnamon roll.
  4. Add the Icing:
    • Drizzle the icing (included in the cinnamon roll package) over the apple-topped cinnamon rolls.
  5. Serve:
    • Serve immediately while warm. Enjoy!

Tips:

  • Apple Variety: Use a mix of sweet and tart apples for a more complex flavor.
  • Spices: Adjust the amount of cinnamon and nutmeg to taste. You can also add a pinch of allspice or cloves for extra warmth.
  • Cinnamon Roll Cooking: Watch the cinnamon rolls closely while on the griddle to avoid burning. Adjust the heat as necessary.

Enjoy your griddle smashed cinnamon rolls with warm apple pie filling!
