Sourdough Discard Beer Bread Recipe

Ingredients:

  • 1 cup (240ml) sourdough discard (unfed)
  • 1 bottle (12 oz or 355ml) beer (any type, but a lighter beer works best)
  • 3 cups (360g) all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted (divided)
  • Optional: 1 teaspoon dried herbs (rosemary, thyme, or your favorite herbs)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt. If using dried herbs, add them now.
  3. Add Wet Ingredients: Make a well in the center of the dry ingredients and add the sourdough discard and beer. Stir until just combined, being careful not to overmix. The batter will be thick and sticky.
  4. Add Melted Butter:
    • Pour half of the melted butter into the bottom of the prepared loaf pan.
    • Spoon the batter into the pan and spread it evenly.
    • Pour the remaining melted butter over the top of the batter.
  5. Bake the Bread: Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
