Cashew Chicken

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cashews
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped (for garnish)
  • Cooked rice, for serving

Instructions:

  1. Marinate Chicken:
    • In a bowl, combine the soy sauce, oyster sauce, hoisin sauce, rice vinegar, brown sugar, and sesame oil. Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 10 minutes.
  2. Toast Cashews:
    • In a dry skillet over medium heat, toast the cashews until lightly golden brown and fragrant, about 3-4 minutes. Remove from the skillet and set aside.
  3. Cook Chicken:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  4. Sauté Aromatics and Vegetables:
    • In the same skillet, add a little more oil if needed. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant. Add the sliced bell peppers and broccoli florets, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. Combine Chicken and Vegetables:
    • Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through.
  6. Add Sauce:
    • Pour the remaining marinade over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. Serve:
    • Serve the cashew chicken stir-fry hot over cooked rice.
  8. Garnish:
    • Garnish with toasted cashews and chopped green onions before serving.
  9. Enjoy:
