Apple fritter bread

Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract

For the Apple Filling:

  • 2 large apples, peeled, cored, and diced (such as Granny Smith)
  • 2 tablespoons unsalted butter
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or apple cider
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Prepare Apple Filling:
    • In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, and ground cinnamon. Cook, stirring occasionally, for about 5-7 minutes until the apples are tender and caramelized. Remove from heat and set aside to cool.
  3. Prepare Bread Batter:
    • In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and granulated sugar.
    • In a separate bowl, beat the eggs. Stir in the applesauce, vegetable oil, and vanilla extract until well combined.
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Assemble Bread:
    • Spread half of the batter into the prepared loaf pan. Spoon half of the apple filling evenly over the batter. Repeat with the remaining batter and apple filling.
  5. Bake:
    • Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  7. Prepare Glaze:
    • In a small bowl, whisk together the powdered sugar, milk or apple cider, and vanilla extract until smooth. Adjust the consistency by adding more milk if too thick, or more powdered sugar if too thin.
  8. Glaze Bread:
    • Once the bread has cooled, drizzle the glaze over the top. Allow the glaze to set for a few minutes before slicing and serving.
  9. Serve:
    • Slice the apple fritter bread and serve it as a delicious breakfast treat or afternoon snack.
