Instructions:

    • In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, parsley, garlic, red onion, beaten eggs, and black pepper. Mix well until all ingredients are evenly combined.
  3. Form Fritters:
    • Divide the mixture into equal portions and shape them into patties, about 2-3 inches in diameter.
  4. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  5. Air Fry Fritters:
    • Lightly coat the air fryer basket with cooking spray.
    • Place the zucchini fritters in the basket, ensuring they are not overcrowded.
    • Cook for 6 minutes, flip the fritters, and continue cooking for an additional 6 minutes or until golden brown and crisp.
  6. Prepare Dipping Sauce:
    • In a small bowl, mix together Greek yogurt, lemon juice, chopped dill, salt, and pepper to create a refreshing dipping sauce.
  7. Serve:
    • Once the fritters are cooked to perfection, remove them from the air fryer and let them cool for a few minutes.
