CROCKPOT LASAGNA

Title: Slow Cooker Lasagna

Ingredients:

  • 1 pound (450g) ground beef
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1/2 cup water
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • 9 lasagna noodles, uncooked
  • 3 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook Ground Beef:
    • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add chopped onions and minced garlic. Cook for an additional 2-3 minutes until the onions are softened.
  2. Prepare Tomato Sauce:
    • In a large bowl, combine crushed tomatoes, tomato sauce, tomato paste, water, dried basil, dried oregano, salt, black pepper, and crushed red pepper flakes (if using). Mix well.
  3. Layer the Lasagna:
    • Spoon a small amount of the tomato sauce mixture into the bottom of the slow cooker, spreading it evenly. Place three uncooked lasagna noodles on top of the sauce. Break the noodles if needed to fit.
  4. Layer Cheese and Sauce:
    • Spread a layer of ricotta cheese over the noodles, followed by a layer of mozzarella and Parmesan cheese. Spoon a portion of the meat sauce over the cheese.
  5. Repeat Layers:
    • Repeat the layering process, using three lasagna noodles for each layer and alternating between cheese and meat sauce. Ensure the top layer is a generous amount of meat sauce.
  6. Cook in Slow Cooker:
    • Cover the slow cooker and cook on low for 4-6 hours or until the noodles are tender.
  7. Finish with Cheese:
    • In the last 30 minutes of cooking, sprinkle additional mozzarella and Parmesan cheese on top. Cover and let it melt.
  8. Serve:
    • Once the lasagna is cooked and the cheese is melted, turn off the slow cooker. Let it rest for a few minutes before slicing. Garnish with fresh basil or parsley if desired.
