Homemade Turkey Noodle Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery ribs, diced
  • 2 cloves garlic, minced
  • 8 cups turkey or chicken broth (homemade or store-bought)
  • 2 cups cooked turkey meat, shredded or diced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 oz wide egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large soup pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes or until the vegetables are softened.
  3. Add the minced garlic to the pot and cook for an additional 1 minute until fragrant.
  4. Pour in the turkey or chicken broth into the pot, stirring to combine with the vegetables.
  5. Add the shredded or diced cooked turkey meat, bay leaf, dried thyme, salt, and pepper to the pot. Stir well to combine all the ingredients.
  6. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 45 minutes to 1 hour, allowing the flavors to meld together.
  7. While the soup is simmering, cook the wide egg noodles according to the package instructions in a separate pot. Drain and set aside.
  8. After the soup has simmered and the flavors have developed, remove the bay leaf from the pot and discard it.
  9. Add the cooked egg noodles to the soup, stirring gently to incorporate them.
  10. Taste the soup and adjust the seasoning with salt and pepper if needed.
  11. Let the soup simmer for an additional 5-10 minutes to allow the noodles to absorb some of the broth and flavors.
  12. Ladle the homemade turkey noodle soup into bowls. Garnish with freshly chopped parsley.
  13. Serve the soup hot with crusty bread or crackers on the side, if desired.
