Northern Bean and Sausage Cassoulet

Ingredients:

  • 1 pound dried northern white beans, soaked overnight
  • 1 pound smoked sausage, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup dry white wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil

Instructions:

Preparation:

  1. Soak Beans: Place the dried northern white beans in a large bowl, cover with water, and let them soak overnight. Drain and rinse the beans before using.
  2. Preheat Oven: Preheat your oven to 325°F (163°C).

Cooking:

  1. Brown Sausage: In a large oven-safe pot or Dutch oven, brown the sliced smoked sausage over medium heat until it develops a golden color. Remove excess fat, if any.
  2. Sauté Vegetables: Add chopped onion, minced garlic, diced carrots, and diced celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Combine Ingredients: Stir in the soaked and drained white beans, diced tomatoes with their juice, chicken broth, dry white wine (if using), bay leaves, dried thyme, salt, and black pepper.
  4. Bring to a Simmer: Bring the mixture to a simmer over medium heat, then cover the pot and transfer it to the preheated oven.
  5. Bake: Bake the cassoulet in the oven for approximately 1.5 to 2 hours or until the beans are tender and the flavors have melded together. Stir occasionally during the cooking process.

Topping:

  1. Prepare Topping: In a small bowl, combine breadcrumbs, chopped fresh parsley, and olive oil.
  2. Top and Broil: Remove the pot from the oven and increase the oven temperature to broil. Sprinkle the breadcrumb mixture evenly over the cassoulet. Place the pot under the broiler for 2-3 minutes, or until the topping is golden and crispy.

Serving:

  1. Serve Hot: Remove the bay leaves and discard them. Serve the Northern Bean and Sausage Cassoulet hot, ladled into bowls.
  2. Enjoy: Garnish with additional fresh parsley if desired. Enjoy this hearty and flavorful cassoulet with a side of crusty bread for a complete and satisfying meal.
