Prime rib recipe

Preparation Time: 30 minutes
Cooking Time: 2.5 – 3 hours
Resting Time: 20 – 30 minutes
Serves: 8-10

Ingredients:

For the Prime Rib:

  • 1 standing rib roast (bone-in) – about 4 to 5 pounds
  • Salt and black pepper to taste
  • 4 tablespoons Dijon mustard

For the Herb Crust:

  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • Salt and black pepper to taste

Instructions:

Preheat the Oven:

  1. Preheat your oven to 450°F (230°C).

Prepare the Prime Rib:

  1. Place the standing rib roast on a cutting board with the rib side down.
  2. Season the roast generously with salt and black pepper.
  3. Brush the entire surface of the roast with Dijon mustard.

Make the Herb Crust:

  1. In a bowl, combine minced garlic, chopped rosemary, thyme, parsley, olive oil, Dijon mustard, salt, and black pepper.
  2. Mix until well combined.

Apply the Herb Crust:

  1. Spread the herb mixture evenly over the entire surface of the roast, pressing it down slightly to adhere.
  2. Place the roast on a rack in a roasting pan, rib side down.

 Roast:

  1. Roast the prime rib in the preheated oven for 15 minutes to sear the outside.
  2. Reduce the oven temperature to 325°F (163°C).
  3. Continue roasting for about 2 to 2.5 hours or until a meat thermometer inserted into the thickest part reads your desired level of doneness:
    • 120°F (49°C) for rare
    • 130°F (54°C) for medium-rare
    • 140°F (60°C) for medium

 Rest:

  1. Remove the roast from the oven and tent it with aluminum foil.
  2. Let it rest for 20-30 minutes. This allows the juices to redistribute and the internal temperature to rise a bit more.

Carve and Serve:

  1. Carve the prime rib into thick slices.
  2. Serve with your favorite side dishes.

Note: Cooking times may vary, so it’s always recommended to use a meat thermometer to check for doneness.
