Overnight Weetabix cheesecake

Preparation Time: 20 minutes (+ overnight chilling)

Serves: 8

Ingredients:

For the Base:

  • 200g (about 7 ounces) Weetabix biscuits, crushed
  • 100g (1/2 cup) unsalted butter, melted

For the Filling:

  • 500g (2 cups) cream cheese, softened
  • 200g (1 cup) granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 250ml (1 cup) heavy cream, whipped to stiff peaks

For the Topping:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Drizzle of honey or maple syrup (optional)

Instructions:

Prepare the Base:

  1. Crush Weetabix Biscuits:
    • Place Weetabix biscuits in a zip-top bag and crush them using a rolling pin or a food processor until you have fine crumbs.
  2. Mix with Melted Butter:
    • In a bowl, combine the crushed Weetabix biscuits with melted butter until the mixture resembles wet sand.
  3. Press into Base:
    • Press the biscuit mixture firmly into the base of a springform pan to form an even crust. Place the pan in the refrigerator while preparing the filling.

Prepare the Filling:

  1. Beat Cream Cheese:
    • In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add Sugar and Flavorings:
    • Add granulated sugar, vanilla extract, and lemon zest to the cream cheese. Beat until well combined.
  3. Fold in Whipped Cream:
    • Gently fold the whipped cream into the cream cheese mixture until smooth and well incorporated.
  4. Layer Over the Base:
    • Pour the cream cheese mixture over the prepared Weetabix base, smoothing the top with a spatula.

Chill Overnight:

  1. Refrigerate:
    • Cover the springform pan with plastic wrap and refrigerate the cheesecake overnight, allowing it to set.

Serve:

  1. Top with Berries and Sweetener:
    • Before serving, decorate the cheesecake with fresh berries and drizzle with honey or maple syrup if desired.
  2. Slice and Enjoy:
    • Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.

Serving Tip:

  • Garnish with additional crushed Weetabix biscuits for a decorative touch.

Note: Feel free to experiment with different berries or add a fruit coulis for extra flavor.
