  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine Dry Ingredients:
    • In a bowl, combine almond flour, shredded coconut, sugar-free chocolate chips, chopped pecans, baking powder, and salt. Mix well.
  3. Cream Butter and Sweetener:
    • In a separate bowl, cream together softened butter and granulated erythritol until light and fluffy.
  4. Add Egg and Vanilla:
    • Beat in the egg and vanilla extract until well combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms.
  6. Scoop and Place on Baking Sheet:
    • Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  7. Flatten the Cookies:
    • Gently flatten each cookie with the back of a spoon or your fingertips.
  8. Bake in the Oven:
    • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  9. Cool on the Baking Sheet:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
