BUTTER PECAN POUND CAKE

Ingredients:

For the Cake:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream

For the Butter Pecan Mixture:

  • 1 cup pecans, chopped
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

For the Butter Pecan Mixture:

  1. Prepare Pecans:
    • In a small bowl, mix together chopped pecans, melted butter, brown sugar, and ground cinnamon. Set aside.

For the Cake:

  1. Preheat Oven:
    • Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan.
  2. Cream Butter and Sugar:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add Eggs and Vanilla:
    • Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine Dry Ingredients:
    • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add Dry Ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined.
  6. Add Butter Pecan Mixture:
    • Gently fold in the prepared butter pecan mixture into the cake batter.
  7. Bake:
    • Pour the batter into the prepared bundt pan. Smooth the top with a spatula. Bake in the preheated oven for 1 hour and 15 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the cake to cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.

For the Glaze:

  1. Prepare Glaze:
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle Glaze:
    • Drizzle the glaze over the cooled cake.
  3. Slice and Serve:
    • Once the glaze has set, slice and serve your delicious Butter Pecan Pound Cake.

Note:

  • Ensure the cake is completely cooled before applying the glaze to prevent it from melting.
  • You can add a scoop of vanilla ice cream or a dollop of whipped cream when serving for an extra treat.
