Crockpot Honey Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup ketchup
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for cornstarch mixture)

Instructions:

  1. In a mixing bowl, combine the honey, soy sauce, ketchup, olive oil, minced garlic, dried basil, dried oregano, red pepper flakes (if using), salt, and pepper. Whisk until well combined.
  2. Place the chicken breasts in the crockpot/slow cooker in a single layer.
  3. Pour the honey garlic sauce mixture over the chicken, making sure the chicken is evenly coated.
  4. Cover the crockpot with the lid and cook on high for 4 hours or on low for 6-8 hours, or until the chicken is tender and cooked through.
  5. If you prefer a thicker sauce, about 30 minutes before serving, whisk together the cornstarch and water in a small bowl until smooth. Stir the cornstarch mixture into the crockpot with the chicken and sauce. Cover and continue cooking until the sauce thickens slightly.
  6. Once the chicken is cooked and the sauce is thickened (if using cornstarch), use tongs to remove the chicken breasts from the crockpot and place them on a serving plate.
  7. Spoon some of the honey garlic sauce over the chicken breasts.
  8. Serve the crockpot honey garlic chicken hot, garnished with chopped green onions or sesame seeds if desired, and with your favorite side dishes such as steamed rice, quinoa, or roasted vegetables.
