Green Chicken Enchilada Soup

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 1 (10 oz) can green enchilada sauce
  • 1 (4 oz) can diced green chilies
  • 1 cup frozen corn kernels
  • 1 can black beans, drained and rinsed
  • Salt and pepper, to taste
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: chopped fresh cilantro, sliced green onions, sour cream, tortilla strips

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic, ground cumin, chili powder, and dried oregano to the pot. Stir and cook for another 1-2 minutes until fragrant.
  3. Push the onion and spice mixture to the side of the pot and add the boneless, skinless chicken breasts. Cook the chicken for about 5-6 minutes per side until browned and cooked through.
  4. Pour in the chicken broth, green enchilada sauce, diced green chilies, frozen corn kernels, and drained black beans. Stir well to combine all the ingredients.
  5. Bring the soup to a simmer. Cover the pot and let it simmer for about 15-20 minutes, allowing the flavors to meld together and the chicken to become tender.
  6. Once the chicken is cooked through and tender, use tongs to remove it from the pot. Shred the chicken using two forks and return it to the soup.
  7. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  8. Sprinkle shredded Monterey Jack cheese into the soup, stirring until melted and well incorporated.
  9. Allow the soup to simmer for an additional 5 minutes to ensure everything is heated through and the cheese is melted completely.
  10. Serve the Green Chicken Enchilada Soup hot, garnished with chopped fresh cilantro, sliced green onions, a dollop of sour cream, and tortilla strips if desired.
  11. Enjoy this comforting and flavorful soup as a delicious meal on its own or with your favorite Mexican-inspired sides!

Note: You can customize this soup by adding other ingredients like diced bell peppers, chopped jalapeños for extra heat, or a squeeze of fresh lime juice for brightness. Adjust the thickness of the soup by adding more chicken broth if desired.
