  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish
  • Optional: cooked rice or cauliflower rice for serving

Instructions:

  1. Cook the Ground Meat:
    • In a large skillet or wok, heat the sesame oil over medium-high heat.
    • Add the ground pork or chicken to the skillet and cook until browned and cooked through, breaking it up into crumbles as it cooks. Remove excess fat if needed.
  2. Add Aromatics and Vegetables:
    • Push the cooked meat to the side of the skillet and add the chopped onion, garlic, and ginger to the center. Cook until aromatic, about 1-2 minutes.
    • Stir in the shredded carrots and cabbage, and cook for an additional 3-4 minutes until the vegetables are slightly softened.
  3. Make the Sauce:
    • In a small bowl, mix together soy sauce (or tamari), rice vinegar, Sriracha sauce, sugar (if using), salt, and black pepper.
    • Pour the sauce over the meat and vegetables in the skillet. Stir well to coat everything evenly.
  4. Simmer and Finish:
    • Reduce the heat to medium-low and let the mixture simmer for 5-7 minutes, allowing the flavors to meld together.
    • Taste and adjust seasoning if needed, adding more soy sauce, Sriracha, or salt and pepper according to your preference.
  5. Serve:
    • Spoon the homemade egg roll filling into bowls.
    • Garnish with chopped green onions and sesame seeds.
    • Serve hot as is or over cooked rice or cauliflower rice for a complete meal.
