Slowcooker Chicken and Dumplings

Ingredients:

For the Chicken Stew:

  • 2 lbs (about 1 kg) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 cup frozen peas (added in the last 30 minutes)

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions:

 Prepare the Chicken Stew:

  1. In the slow cooker, combine chicken, chicken broth, celery, carrots, onion, garlic, thyme, rosemary, salt, and pepper.
  2. Stir well to ensure even distribution of ingredients.
  3. Slow Cook:
  1. Cover and cook on HIGH for 4 hours or LOW for 8 hours, or until the chicken is tender.
  2. In the last 30 minutes of cooking, add the frozen peas.

 Make the Dumplings:

  1. In a medium-sized bowl, whisk together the flour, baking powder, and salt.
  2. Add milk and melted butter, stirring until just combined. The batter will be thick.

 Drop Dumplings:

  1. Drop spoonfuls of the dumpling batter evenly over the hot chicken stew in the slow cooker.
  2. Cover and continue cooking on HIGH for an additional 30-45 minutes, or until the dumplings are cooked through and no longer doughy in the center.

 Serve:

  1. Ladle the chicken stew and dumplings into bowls.
  2. Garnish with fresh herbs if desired.

Note: Adjust the seasoning and thickness of the stew to your liking. You can add more broth or water if needed.
