Inspired by rustic farmhouse cooking, this soup is ideal for cold-weather dinners, family meals, or easy meal prep. It’s a one-pot wonder that transforms simple pantry staples into something truly cozy and delicious.

Ingredients

For the Soup:

  • 1 lb (450g) ground beef

  • 1 tbsp olive oil (if needed)

  • 1 small yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups diced potatoes (about 4 medium russet or Yukon gold)

  • 2 medium carrots, sliced

  • 1 stalk celery, chopped (optional)

  • 6 cups beef broth or stock

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper

  • 1/2 tsp paprika (optional)

  • 1/4 tsp dried thyme or parsley

  • 1/2 cup frozen peas or corn (optional)

For the Flour Dumplings:

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp garlic powder (optional)

  • 1 large egg

  • 1/4 cup milk (plus more as needed)

  • 1 tbsp melted butter or vegetable oil

  • Fresh parsley for garnish (optional)

Equipment You’ll Need

  • Large soup pot or Dutch oven

  • Mixing bowls

  • Ladle

  • Wooden spoon

  • Measuring cups and spoons

Instructions

Step 1: Brown the Ground Beef

  1. In a large soup pot over medium heat, add ground beef and cook until browned (about 5–7 minutes).

  2. If there’s excess grease, drain it off. If the meat is very lean, add 1 tablespoon of olive oil to help sauté the veggies.

  3. Add chopped onion and garlic to the pot. Sauté for 2–3 minutes until softened and fragrant.

Step 2: Add Vegetables and Simmer

  1. Stir in diced potatoes, carrots, and celery (if using).

  2. Pour in beef broth, then add salt, pepper, paprika, and thyme.

  3. Bring the soup to a boil, then reduce heat to a low simmer.

  4. Cover and cook for about 20–25 minutes, or until the vegetables are fork-tender.

Step 3: Make the Dumpling Dough

While the soup simmers:

  1. In a mixing bowl, whisk together flour, baking powder, salt, and garlic powder.

  2. In a small bowl, whisk the egg, milk, and melted butter (or oil).

  3. Pour the wet ingredients into the dry and stir until a soft, sticky dough forms. If it’s too dry, add a tablespoon of milk at a time until the dough comes together. Avoid overmixing.

Note: The dough should be soft and scoopable, not too firm or runny.

Step 4: Add Dumplings to the Soup

  1. Once vegetables are tender, drop spoonfuls (about 1–2 teaspoons each) of the dumpling dough directly into the simmering soup. Try to spread them out evenly.

  2. Cover the pot with a lid and let the dumplings cook in the soup for 10–12 minutes without lifting the lid. This traps the steam and helps the dumplings rise and cook through.

  3. After 10 minutes, check one dumpling by cutting it in half. It should be fluffy and fully cooked inside.

  4. Stir in frozen peas or corn (if using) and cook for another 3–4 minutes.

Step 5: Taste and Serve

  1. Taste the soup and adjust seasoning if needed.

  2. Ladle soup into bowls, making sure each serving has dumplings, beef, and plenty of broth.

  3. Garnish with chopped fresh parsley or cracked black pepper, if desired.

  4. Serve hot with crusty bread or a side salad.

Flavor Variations & Tips

  • Add Cheese: Stir in 1/2 cup of shredded cheddar or Parmesan just before serving for a cheesy twist.

  • Make It Creamy: Add 1/2 cup of heavy cream or whole milk for a creamier base.

  • Herbs: Fresh dill or parsley gives the soup a bright finish. Add just before serving.

  • Spicy Kick: A dash of crushed red pepper or hot sauce can add warmth if desired.

Storage & Reheating

Refrigerate:
Store leftovers in an airtight container for up to 4 days.

Freeze:
This soup can be frozen, but note that the dumplings may become slightly softer when reheated. Freeze in containers for up to 2 months.

Reheat:
Warm gently on the stovetop over low heat or in the microwave. Add a splash of broth or water to loosen if needed.
