 Introduction

Irish Soda Bread is a rustic, quick bread with a hearty crust and tender crumb. Unlike yeasted breads, soda bread uses baking soda as its leavening agent — no kneading, no rising, and no fuss. It’s a traditional staple in Irish homes and is typically made with just four simple ingredients: flour, baking soda, salt, and buttermilk.

This bread is dense, yet soft, and slightly tangy from the buttermilk. It pairs beautifully with soups, stews, butter, jam, or a chunk of sharp cheese. Whether you’re baking for St. Patrick’s Day or looking for an easy, reliable bread, soda bread is an Irish classic that deserves a place at your table.

 Ingredients

Traditional Version:

  • 4 cups all-purpose flour (or 3 cups white + 1 cup whole wheat for added texture)

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 ¾ cups buttermilk

Optional Add-ins (for a modern touch):

  • 1 tablespoon sugar (for slightly sweet bread)

  • ½ cup raisins or currants (for Irish “Spotted Dog”)

  • 1 teaspoon caraway seeds (for traditional flavor)

 Instructions

Step 1: Preheat Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix Dry Ingredients

In a large bowl, whisk together:

  • Flour

  • Baking soda

  • Salt

If using sugar, raisins, or caraway seeds, stir them in now.

Step 3: Add Buttermilk

Make a well in the center of the dry ingredients and pour in buttermilk. Using a wooden spoon or your hands, gently mix just until the dough comes together.

Do not overmix. The dough should be soft, slightly sticky, and shaggy — not smooth.

Step 4: Shape the Loaf

Turn the dough out onto a lightly floured surface. Shape it quickly into a round loaf, about 7–8 inches in diameter.

Transfer the shaped dough to your prepared baking sheet or cast-iron skillet.

Using a sharp knife, cut a deep “X” across the top of the loaf — about ½ inch deep. This helps the bread bake evenly and has symbolic meaning in Irish folklore (to “let the fairies out”).

Step 5: Bake

Place the bread in the center of the preheated oven and bake for 15 minutes at 425°F (220°C), then reduce the heat to 400°F (200°C) and bake for an additional 25–30 minutes.

It’s done when:

  • The loaf is deep golden brown

  • It sounds hollow when tapped on the bottom

  • A toothpick inserted in the center comes out clean

Step 6: Cool and Serve

Transfer the loaf to a wire rack and let it cool for at least 15–20 minutes before slicing.

Serve warm with butter, jam, Irish cheddar, or alongside hearty soups and stews.
