Instructions:

Prepare the Filling:

  1. Cook Ground Meat:
    • In a large skillet, heat olive oil over medium-high heat. Add chopped onions and minced garlic, sautéing until softened. Add ground beef or turkey, breaking it apart with a spoon, and cook until browned.
  2. Season with Taco Mix:
    • Sprinkle taco seasoning over the meat, stirring to combine. Follow the package instructions for the correct amount of water. Simmer until the mixture thickens.
  3. Add Vegetables:
    • Add black beans, corn, and quartered cherry tomatoes to the skillet. Stir well and cook for an additional 3-5 minutes until the vegetables are heated through. Season with salt and black pepper to taste.
  4. Assemble Cheesy Pocket Tacos:
    • Preheat Oven:
      • Preheat your oven to 375°F (190°C).
    • Prepare Tortillas:
      • Place the flour tortillas on a baking sheet. Sprinkle shredded Mexican blend cheese on one half of each tortilla.
