Ingredients:

  • 2 cloves garlic, minced

  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, quartered
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

For the Cheesy Pocket Tacos:

  • 8 small flour tortillas
  • 1 1/2 cups shredded Mexican blend cheese
  • 1/2 cup sour cream
  • Fresh cilantro, chopped, for garnish
  • Jalapeño slices, for garnish (optional)
  • Lime wedges, for serving

Instructions:

Prepare the Filling:

  1. Cook Ground Meat:
    • In a large skillet, heat olive oil over medium-high heat. Add chopped onions and minced garlic, sautéing until softened. Add ground beef or turkey, breaking it apart with a spoon, and cook until browned.
  2. Season with Taco Mix:
    • Sprinkle taco seasoning over the meat, stirring to combine. Follow the package instructions for the correct amount of water. Simmer until the mixture thickens.
  3. Add Vegetables:
    • Add black beans, corn, and quartered cherry tomatoes to the skillet. Stir well and cook for an additional 3-5 minutes until the vegetables are heated through. Season with salt and black pepper to taste.
  4. Assemble Cheesy Pocket Tacos:
    • Preheat Oven:
      • Preheat your oven to 375°F (190°C).
    • Prepare Tortillas:
      • Place the flour tortillas on a baking sheet. Sprinkle shredded Mexican blend cheese on one half of each tortilla.
    • Add Filling:
      • Spoon a generous amount of the meat and vegetable filling over the cheese on each tortilla.
    • Fold and Seal:
      • Fold the tortillas in half, creating a pocket. Press down the edges to seal the tacos.
    • Top with More Cheese:
      • Sprinkle additional shredded cheese on top of each taco.
  5. Bake:
    • Bake in the preheated oven for 10-12 minutes or until the tortillas are golden brown, and the cheese is melted and bubbly.
  6. Serve:
    • Remove the cheesy pocket tacos from the oven. Top each taco with a dollop of sour cream, chopped cilantro, and jalapeño slices if desired.
  7. Garnish and Enjoy:
