MAGIC LEMON COBBLER

Ingredients:

  • 1 cup milk

  • 1 1/2 cups hot water

Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).

Step 2: Prepare the Batter

  1. In a large mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
  2. Stir in the milk, melted butter, vanilla extract, and lemon zest until combined into a smooth batter.

Step 3: Pour Batter into Baking Dish

  1. Pour the batter into a greased 9×13-inch baking dish, spreading it evenly across the bottom.

Step 4: Add the Lemon Mixture

  1. In a separate bowl, combine the lemon juice, remaining 1/2 cup of sugar, and hot water. Stir until the sugar dissolves.
  2. Pour the lemon mixture evenly over the batter in the baking dish. Do not stir. The batter will rise to the top while baking.

Step 5: Bake the Cobbler

  1. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and set. The cobbler will have a buttery, crisp top and a soft, lemony filling beneath.

Step 6: Serve

  1. Allow the cobbler to cool slightly before serving.
  2. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
