Ingredients:

  • 1 small russet potato (or 1/2 cup mashed potatoes)
  • 4-6 cups powdered sugar (confectioner’s sugar), sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter (for filling)

Instructions:

Step 1: Cook the Potato

  1. Peel and boil the potato in water until it’s soft (about 10-15 minutes). Drain and mash the potato well, making sure there are no lumps. You’ll need about 1/2 cup of mashed potato.
  2. Allow the mashed potato to cool to room temperature.

Step 2: Make the Dough

  1. Once the potato has cooled, transfer it to a large mixing bowl.
  2. Gradually add sifted powdered sugar, about 1 cup at a time, stirring after each addition. The mixture will become thin and runny at first, but keep adding sugar until it forms a stiff dough.
  3. Stir in the vanilla extract.
  4. The final dough should be smooth, not sticky, and able to hold its shape.

Step 3: Roll Out the Dough

  1. Dust your work surface with powdered sugar. Place the dough on the surface and roll it out into a rectangle, about 1/4-inch thick.

Step 4: Add Peanut Butter

  1. Spread an even layer of peanut butter over the entire surface of the dough.

Step 5: Roll the Candy

  1. Starting from one of the long sides, carefully roll the dough into a log, similar to how you would roll a jelly roll.
  2. Once rolled, wrap the log in plastic wrap and refrigerate for about 1 hour to firm up.

Step 6: Slice and Serve

  1. After the candy has chilled, remove it from the fridge and slice it into 1/4-inch thick pieces.
  2. Serve immediately or store in an airtight container in the refrigerator.

Tips:

  • Potato Type: Use russet or Idaho potatoes for the best texture.
  • Consistency: If the dough is too sticky, add more powdered sugar. If it’s too dry, you can add a tiny bit of milk to soften it up.
  • Flavor Variations: While peanut butter is the traditional filling, you can also try Nutella, almond butter, or even a chocolate spread for a twist.

Storage:

  • Store potato candy in an airtight container in the fridge for up to 1 week. You can also freeze it for up to 3 months.
