Ingredients:

For the Chicken:

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 4 cloves garlic, peeled and smashed
  • Fresh herbs (optional, like rosemary, thyme, or parsley) for stuffing the cavity

For the Potatoes:

  • 1 lb (450g) baby potatoes, halved or quartered if large
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:
    • Remove the giblets from the chicken and pat the chicken dry with paper towels.
    • Rub the chicken all over with olive oil, making sure it’s evenly coated.
    • In a small bowl, mix together garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Rub this seasoning mix all over the chicken, including under the skin if possible.
    • Stuff the cavity of the chicken with the lemon halves, garlic cloves, and fresh herbs.

    • Arrange the seasoned potatoes around the chicken in the air fryer basket.
    • Continue cooking for another 15-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
  4. Check for Doneness:
    • Use a meat thermometer to check the thickest part of the chicken to ensure it has reached the safe internal temperature of 165°F (75°C).
    • If the chicken or potatoes need more time, continue cooking in 5-minute increments until done.
  5. Rest the Chicken:
    • Remove the chicken from the air fryer and let it rest for 10 minutes before carving. This helps the juices redistribute, keeping the meat moist.

  • Carve the Chicken:
    • Carve the chicken and serve it with the roasted potatoes on the side.
    • Garnish with fresh herbs or a squeeze of lemon juice if desired.
