  • 4 slices artisan sourdough or brioche bread

  • 2 tablespoons softened butter (for spreading on bread)

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded sharp white cheddar cheese

  • ¼ cup grated Parmesan or Gruyère (optional for extra depth)

  • 1 tablespoon mayonnaise (optional, for extra richness on interior)

  • A few slices of tomato or arugula (optional, for freshness)

Instructions

Step 1: Sauté the Shrimp

  1. Heat olive oil or butter in a skillet over medium heat.

  3. Toss in the shrimp, season with salt, pepper, and optional paprika or Cajun seasoning.

  4. Cook for 2–3 minutes per side, until shrimp turn pink and opaque.

  5. Drizzle with lemon juice and toss with chopped herbs.

  6. Remove from pan, set aside, and chop roughly if using large shrimp.


Step 2: Assemble the Sandwiches

  1. Lay out the bread slices and butter one side of each slice. These will face outward for grilling.

  2. On the unbuttered side, optionally spread a thin layer of mayonnaise or Dijon mustard.

  3. Layer cheeses: Start with cheddar, add the shrimp, sprinkle on mozzarella, and finish with Parmesan (or Gruyère for depth).

  4. Add optional sliced tomatoes or a handful of arugula if using.

  5. Top with the second slice of bread, buttered side facing out.

Step 3: Grill the Sandwich

  1. Wipe the skillet clean if needed and heat to medium-low.

  2. Place sandwiches in the pan and press gently.

  3. Cook for 3–4 minutes per side, or until bread is golden brown and the cheese is melting and gooey.

  4. Reduce heat slightly if browning too quickly before cheese melts.

Step 4: Serve

  1. Remove from skillet and let sit 1 minute before slicing to avoid cheese leakage.

  2. Slice in halves or diagonally for that classic grilled cheese look.

  3. Serve with a side of garlic aioli, tomato bisque, or a crisp green salad.
