Ingredients

  • 1 pound (450g) mushrooms, sliced (button, cremini, or your favorite variety)
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach leaves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the Olive Oil:
    • In a large skillet, heat the olive oil over medium-high heat.
  2. Cook the Mushrooms:
    • Add the sliced mushrooms to the skillet.
    • Cook, stirring occasionally, until they are browned and tender, about 5-7 minutes.
  3. Add Garlic and Onion:
    • Add the minced garlic and chopped onion to the skillet.
    • Cook for another 2-3 minutes until the onion is translucent and fragrant.
  4. Add Sun-Dried Tomatoes:
    • Stir in the chopped sun-dried tomatoes and cook for 1-2 minutes.
  5. Add Cream and Parmesan:
    • Pour in the heavy cream and bring it to a gentle simmer.
    • Stir in the grated Parmesan cheese until it melts and the sauce thickens, about 3-5 minutes.
  6. Add Spinach and Seasonings:
    • Add the fresh spinach leaves and cook until they wilt, about 1-2 minutes.
    • Stir in the Italian seasoning, and season with salt and pepper to taste.
  7. Serve:
    • Garnish with freshly chopped parsley and serve immediately.
    • This dish can be enjoyed on its own or served over pasta, rice, or with crusty bread.
