For those following a ketogenic lifestyle, missing out on classic Italian comfort food can be the hardest part. This Keto Chicken Parmesan solves that dilemma beautifully. We replace the traditional breadcrumbs with a super-crispy, golden coating made from crushed pork rinds and Parmesan cheese, creating a cutlet that’s satisfyingly crunchy without the carbs. Baked, not fried, and smothered in sugar-free marinara and melted mozzarella, this dish delivers all the nostalgic flavor you crave. It’s a family-friendly weeknight winner that proves you don’t have to sacrifice flavor for health.

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (approx. 6 oz each), pounded to ½-inch thickness

  • 1 cup finely ground pork rind crumbs (plain)

  • ¾ cup finely grated Parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt

  • 2 large eggs

  • 2 tbsp heavy cream or water

  • ¼ cup avocado oil or olive oil (for baking sheet)

For the Assembly:

  • 1 ½ cups sugar-free marinara sauce (check labels for added sugars)

  • 1 ½ cups shredded whole-milk, low-moisture mozzarella cheese

  • ¼ cup freshly grated Parmesan cheese

  • Fresh basil or parsley, chopped (for garnish)

Equipment

  • Meat mallet or rolling pin

  • 3 shallow bowls or plates

  • Rimmed baking sheet

  • Parchment paper

  • Wire rack (optional, for extra crispiness)

Instructions

Step 1: Prepare the Chicken & Station

Preheat your oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet and lightly grease it, or simply line the sheet with parchment paper and brush generously with avocado oil. This oiled surface will help the bottom get crispy.

Place one chicken breast between two sheets of plastic wrap. Using the flat side of a meat mallet or a rolling pin, gently pound the chicken to an even ½-inch thickness. Repeat with all breasts. This ensures even cooking and a better breading-to-chicken ratio. Pat the chicken completely dry with paper towels—this is crucial for the coating to stick.

Step 2: Create the Breading Assembly Line

Set up your breading station with three shallow dishes:

  1. Dry Mix #1: Combine the pork rind crumbs, ¾ cup grated Parmesan, oregano, garlic powder, onion powder, pepper, and salt. Mix thoroughly.

  2. Wet Dip: Whisk the eggs and heavy cream (or water) together until smooth.

  3. Dry Mix #2: Have a little extra pork rind crumb mixture or just some extra Parmesan on hand for a second light dusting. This double-coat method ensures a thick, secure crust.

Step 3: Bread the Chicken

Working with one piece at a time:

  • Dredge: Coat the chicken thoroughly in the first dry Parmesan-pork rind mixture, pressing to adhere. Shake off excess.

  • Dip: Submerge it into the egg wash, allowing any excess to drip off.

  • Coat Again: Return the chicken to the dry mixture (or the second dish) for a final, firm press to create a solid, even crust. Place the breaded cutlet on the prepared baking sheet. Repeat with remaining chicken.

Step 4: Bake to Golden Perfection

Drizzle or lightly spray the top of each breaded cutlet with a little more oil. This helps with browning.
Bake for 15 minutes on the middle rack. The coating should be set and starting to turn golden.

Step 5: Assemble and Melt

Carefully remove the baking sheet from the oven. Flip each chicken cutlet over—the bottom should be beautifully golden.

  • Sauce: Spoon about 2-3 tablespoons of sugar-free marinara over each cutlet.

  • Cheese: Top each with a generous portion of shredded mozzarella and a sprinkle of the remaining Parmesan.
Return the sheet to the oven and bake for an additional 8-10 minutes, or until the cheese is completely melted, bubbly, and slightly spotted with brown.

Step 6: Rest and Serve

Let the chicken rest for 5 minutes after removing it from the oven. This allows the juices to redistribute and the cheese to set slightly, making it easier to serve.
Garnish with fresh chopped basil or parsley. Serve alongside a crisp green salad dressed in olive oil, or over a bed of zucchini noodles (zoodles) sautéed in garlic.

Chef’s Notes & Tips for Success

  • Pork Rind Substitute: For a nut-based coating, use ¾ cup fine almond flour and ¼ cup more Parmesan. The texture will be slightly different but still delicious.

  • Avoid Soggy Bottoms: The wire rack method is the ultimate secret for maximum crispiness on all sides. The pre-oiled parchment is a great second option.

  • Make it Ahead: You can bread the chicken cutlets and store them in a single layer in the fridge for up to 4 hours before baking. This can even help the coating set better.

  • Sauce on the Side: For the crispiest leftovers, store extra sauce separately and add it when reheating.
