Shirmp fried rice

Ingredients:

    • 2 cups cooked jasmine rice (preferably day-old)
    • 1/2 pound (about 225g) medium shrimp, peeled and deveined
    • 2 eggs, lightly beaten
    • 1 cup mixed vegetables (peas, carrots, corn, and/or diced bell peppers)
    • 3 green onions, thinly sliced
    • 3 cloves garlic, minced
    • 2 tablespoons soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon sesame oil
    • 2 tablespoons vegetable oil, divided
  • Salt and black pepper to taste
  • Optional: 1/2 cup diced pineapple or small pineapple chunks (for sweetness)

Instructions:

  1. Prepare Ingredients:
    • Ensure all ingredients are chopped, minced, and ready before starting the cooking process.
  2. Cook Shrimp:
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Scramble Eggs:
      • In the same skillet, push the cooked shrimp to the side and add the remaining 1 tablespoon of oil. Pour the beaten eggs into the skillet and scramble them. Once cooked, mix the scrambled eggs with the shrimp.
  4. Cook Vegetables:
    • Add the minced garlic and mixed vegetables to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
  5. Add Rice:
    • Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry the rice with the vegetables and eggs.
  6. Season with Soy Sauce and Oyster Sauce:
    • Pour soy sauce and oyster sauce over the rice mixture. Mix well to ensure the rice is evenly coated with the sauces.
  7. Add Shrimp and Green Onions:
    • Add the cooked shrimp back into the skillet. Toss in the sliced green onions. If using diced pineapple, add it at this stage.
  8. Drizzle with Sesame Oil:
      • Drizzle sesame oil over the fried rice and toss everything together. Season with salt and black pepper to taste. Adjust the seasoning and sauce quantities according to your preference.
  9. Finish Cooking:
    • Stir-fry the entire mixture for an additional 2-3 minutes until everything is heated through and well combined.
  10. Serve:
    • Transfer the shrimp fried rice to serving plates or bowls. Garnish with additional sliced green onions if desired.
  11. Enjoy:
    • Serve immediately, and enjoy this delicious and satisfying shrimp fried rice!

Note: Feel free to customize the recipe by adding other ingredients like diced ham, tofu, or additional vegetables. Adjust the level of heat by adding crushed red pepper flakes or a dash of hot sauce if you like it spicy.
